According to today's knowledge - what is worth switching to when it comes to internet messengers?

For family use, maybe even business use.

Telegram, Signal?

And which ones to avoid? WhatsApp, Messenger, Skype?

Does having/using "undesirable" messengers (because it is used for communication within parents in the school class) affect the safety of other contacts and data on the phone/computer?
