Which coffee is healthier: espresso, Turkish, brewed

What is coffee? Has anyone ever asked themselves this question while brewing it? Recently, while sipping my coffee, I decided to check it out. Well, coffee is a drink made from roasted and then ground or instantiated cocoa beans, usually served hot. The coffee itself comes from Ethiopia, in Europe itself it appeared a little later around the 16th century [1].

The name coffee probably comes from the Arabic kahwa. It found its way into most European languages through the Turkish word kahve and the Italian name caffè that was derived from it [2].

In Poland, coffee appeared in Turkish form after the Battle of Vienna in 1683. However, coffee shops were opened for them in Kamieniec Podolski during its occupation by the Ottoman army [3].

Centuries ago, coffee aroused a lot of controversy. Initially praised for its remarkable effects, as time passed, coffee began to be accused of causing a wide variety of health conditions, including stomach problems, heart attacks, cancer and osteoporosis. Therefore, people began to think about the health properties of coffee. The studies conducted so far have not shown which diseases can be caused by drinking coffee, nor have it included it as a healthy food. Scientists do not agree on any of these issues due to the inability to conduct some studies requiring a large sample of people and the proper recognition of independent factors [4].

Coffee, rich in caffeine, has a stimulating role. It clearly stimulates the body, increases the efficiency of thinking, and allows you to eliminate the feeling of mental and physical fatigue. Due to these properties, people usually reach for it in the morning to arouse themselves and gain strength and energy for work. We start to feel the effect of caffeine on our body about half an hour after drinking the drink [5].

There are three most common forms of brewing coffee:

Coffee from the machine is brewed literally a few seconds at a pressure between 9-15 bar. Only the essence comes out of the cup, while in Turkish the ground grains lie in hot water for even a few to several dozen minutes, and the residues after roasting are also released into the drink. The brewing temperature is 92-96 degrees and most coffee machines are programmed to do so. If the temperature is too high, the brewed coffee will have a bitter taste, if the effect is too low, it will be acidic and watery, and the brew will lack flavor.

There are 3 most popular coffee makers:

Espresso machine - coffee beans are used here. Semi-automatic coffee machine - requires finely ground coffee. Filter coffee machine - also ground coffee. Coffee should spend less time in them at high temperature and then it must be immediately cooled [6]. In Turkish - the oldest references to making coffee this way come from Yemen in the 15th century. The chronicler Ibrahim Pecevi noted in 1640 that until 1554 there were no cafes in the Ottoman lands. Around 1554, Hâkem of Aleppo and Şems of Damascus, arriving in Constantinople, opened the first coffee shop in the Tahtakale district. Currently, this method of brewing coffee is less and less popular. It is being superseded by other hot drinks, such as Turkish tea, coffee with express. In 2013, the tradition of brewing coffee and drinking coffee in Turkey was entered on the UNESCO Intangible Heritage List.

Any type of coffee can be used to make Turkish coffee, as long as it is freshly brewed and freshly ground to a fine powder. It is usually brewed in a small, usually copper, narrow-necked crucible - a bell - equipped with a long handle. The narrow neck allows the foam to form without bringing the drink to the boil.

The method of preparation is as follows:

The dish is filled with cold water, sprinkled with finely ground coffee and sugar added. The cezve is put on low heat. For a better effect, the vessel is immersed in a sand-bath-type container. The liquid should rise 2-3 times to the edge of the vessel, and a small amount of steam should escape from the side, from under the foam layer. The first brewing takes 2-3 minutes, where the liquid should start foaming. Then the melody is taken from the fire and waited for the foam to fall off. The jezve is then set on the fire again and the liquid foams faster. Then the vessel is set aside again and wait until the foam collapses. After the third heating, a thin layer of foam should remain on the surface.

Serve the jezve coffee in tiny cups without draining it.

Turkish coffee is black (no milk) and sweet. It is served with a glass of water. It is usually drunk in coffee shops.

It is worth noting that too long brewing can cause the foam to collapse and the coffee will take on an unpleasant aftertaste. On the other hand, if you stop brewing too early, the foam may not be created, which affects the aftertaste of the coffee [7].

Coffee from the coffee machine - the coffee maker was created as an alternative to the coffee machine, in order to simplify the preparation of coffee as much as possible. Its inventor is considered to be the Italian entrepreneur Luigi De Ponti, who designed the devices on behalf of Alfonso Bialetti. Currently, the coffee maker can be found in practically every home. It draws attention with its low price and simplicity in preparing a good infusion. It is most often used in Europe, especially in countries such as Italy, Portugal, Switzerland and Hungary. It is available in many sizes to suit your needs.

How to prepare coffee:

First, pour the ground beans into the coffee maker strainer - the coffee should fill the entire strainer. Use your finger to even out the surface and remove any excess. Warm water is then poured into the bottom tank of the coffee machine, into the high pressure relief valve. You should tighten the coffee maker and put it on the burner, over low heat. The top cover is left open to control the brewing process. Do not hold the handle while screwing it, as it is the most delicate part of the coffee maker. After a minute, coffee begins to flow to the top of the coffee machine. The moment it turns golden, it removes the brew from the heat and closes the lid. This is the most important point in the entire brewing process. If you keep it on the fire for too long, the coffee tastes bitter, resembling burnt. If the infusion stops boiling, it is poured into cups [8].

So far, no unequivocal effect of coffee on health has been demonstrated, but some studies show that coffee consumed in reasonable amounts has positive and sometimes even healing properties. The advantages of drinking coffee are:

reduces the risk of cirrhosis of the liver, facilitates concentration, has a positive effect on the circulation and digestive system, accelerates metabolism, reduces the risk of gallstone disease in men, reduces the risk of Parkinson's disease, reduces the risk of cancer of the intestine and liver, reduces the risk of developing type II diabetes, improves intestinal peristalsis, reduces the development of tooth decay.

On the other hand, the negative effects of drinking coffee are:

increases the feeling of anxiety and fear, weakens memory, causes physical dependence, due to its stimulating properties, it makes it difficult for most people to fall asleep, if a pregnant woman consumes large amounts, it may result in stillbirth, when cooked it may raise the cholesterol value, it may increase the likelihood of a heart attack in people with a slower metabolism, the caffeine contained in it inhibits neurogenesis in the hippocampus, sensitizes dopamine receptors and blocks adenosine receptors [9].

As you know, coffee has advantages and disadvantages. The pleasant aroma of coffee and the presence of caffeine make it available in every aspect of our lives. Drinking coffee has become an art, and being able to brew coffee requires skill and knowledge of varieties and flavor. According to researchers, coffee has more advantages than disadvantages, so drink it whenever you feel like it. On the other hand, excess is harmful in any case.
